Cheer Camp

• 1 1/2 ounces Heering cherry liqueur
• 1/2 ounce Suze (French gentian aperitif)
• 3/4 ounce fresh lime juice
• 1 large egg white
• Ice
• 1 1/2 ounces chilled dry sparkling wine, such as cava
• Pinch of unsweetened dark cocoa powder, for garnish

1. In a cocktail shaker, combine the Heering, Suze, lime juice and egg white and shake vigorously; fill with ice and shake again.
2. Strain into a chilled ice-filled rocks glass, top with the sparkling wine and garnish.
