Soft Taco Casserole

  1. - Brown ground meat and drain any fat;
  2. Add 2 packets taco seasoning mix, plus water called for according to the package directions; Blend well;
  3. Add beans, corn, & Rotel; Blend well;
  4. Bring mixture to a boil, then reduce heat to simmer for 10 minutes; remove from heat;
  5. Stir in half of the shredded cheese, until cheese is melted and completely blended;
  6. Heat oven to 325
  7. Assembly:
  8. Spray 9x13 pan with pan spray;
  9. place flour tortillas to cover bottom of pan;
  10. spread about 1/3 of the meat mixture over the tortillas;
  11. place another layer of tortillas, then spread another 1/3 of the meat mixture;
  12. place a third layer of tortillas, and then spread the remaining meat mixture over that;
  13. sprinkle with the remaining shredded cheese;
  14. bake in 325 degree oven for 25-30 minutes, until hot & cheese is melted and bubbling;
  15. let rest for 10 minutes before cutting;
  16. Serve with lettuce, salsa, sour cream, jalapeno or banana peppers, or whatever extras you enjoy with tacos.
