Best Ever Coleslaw Recipe
- 1 sm or possibly 1/2 large head cabbage (about 2 pounds)
- 1/2 c. fat-free mayonnaise
- 1/2 c. light lowfat sour cream
- 2 Tbsp. sugar
- 2 x green onions with green tops, minced
- 2 Tbsp. prepared horseradish
- 1 Tbsp. fresh lemon juice
- 1/2 tsp salt
- 1/2 tsp dry mustard
- 1/8 tsp cayenne pepper
- 1 x clove garlic, chopped
- 1/2 tsp celery seed
- Remove the outer leaves and core of the cabbage; chop the cabbage into large chunks.
- Place several chunks in a food processor fitted with the steel blade.
- (Don't overfill the processor.)
- Chop fine, using on/off turns; transfer to a large bowl.
- Repeat with the remaining cabbage; don't wash the bowl of the food processor.
- Add in the remaining ingredients to the food processor; process till well combined.
- Pour over the cabbage; cover and chill at least 8 hrs or possibly overnight.
