Lime & Ginger Poached Pears
- 2 litres water
- 1 cup raw sugar
- 3 kaffir lime leaves (or strips of lime rind)
- 1 small piece ginger
- 6 buerre bosc pears, peeled and halved Safeway 1 lb For $1.88 thru 02/09
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- finely grated rind of 1/2 an orange Safeway 1 lb For $0.79 thru 02/09
- 2 tablespoons pistachio nuts, chopped
- Place water, sugar, lime leaves and ginger into a large saucepan.
- Bring to the boil, reduce heat and add pears.
- Simmer for 20-30 minutes until tender.
- Remove pears with a slotted spoon and set aside 2 tablespoons poaching liquid.
- Simmer remaining liquied a further 10 minutes to reduce slightly.
- Combine Philly* with reduced poaching liquid and rind until smooth.
- Serve pears with a dollop of the Philly*, reserved poaching liquid and pistachio nuts.
