Lime & Ginger Poached Pears

  1. Place water, sugar, lime leaves and ginger into a large saucepan.
  2. Bring to the boil, reduce heat and add pears.
  3. Simmer for 20-30 minutes until tender.
  4. Remove pears with a slotted spoon and set aside 2 tablespoons poaching liquid.
  5. Simmer remaining liquied a further 10 minutes to reduce slightly.
  6. Combine Philly* with reduced poaching liquid and rind until smooth.
  7. Serve pears with a dollop of the Philly*, reserved poaching liquid and pistachio nuts.
