New Zealand Brown Rice Salad

  1. Cook rice in water according to package directions.
  2. Drain and cool.
  3. Peel kiwi fruit and cut into 1/4 inch thick slices.
  4. Cut slices in half to form semi circles.
  5. Core and dice apple into 1/2 inch cubes.
  6. Toss together rice, kiwifruit, apple, celery, red pepper strips, walnuts, green onions and parsley in salad bowl.
  7. Mix together vinegar and oil.
  8. Drizzle over salad.
  9. Toss to mix well.
  10. Cover and refrigerate 1 to 2 hours, to allow flavors to blend, before serving.
