Apple Cinnamon Oat Pancakes Recipe
- 1/2 c. whole-wheat flour
- 1/2 c. quick-cooking or possibly old-fashioned oats
- 1 Tbsp. sugar
- 1 tsp baking pwdr
- 1/2 tsp grnd cinnamon
- 1/2 tsp salt
- 1 x egg
- 2/3 c. lowfat milk
- 1/2 c. applesauce
- 2 Tbsp. vegetable oil
- 1/2 c. finely-minced walnuts
- Stir together flour, oats, sugar, baking pwdr, cinnamon, and salt in mixing bowl.
- Beat egg in separate bowl; stir in lowfat milk, applesauce, and oil.
- Add in liquid mix to dry ingredients, stirring just till blended.
- Mix in walnuts.
- Heat greased griddle or possibly skillet over medium heat or possibly to 375 degrees.
- Griddle is ready when a few drops of water bubble and skitter rapidly around.
- For each pancake, pour scant 1/4 c. batter onto warm griddle.
- Cook pancakes till puffed, bubbly and dry around edges.
- Turn and cook other sides till golden.
- This recipe yields about 10 (4-inch) pancakes.
- Yield: 10 pancakes
