Chocolate Chip Flax Oatmeal Cookies

  1. Preheat oven to 350F and line 4 baking sheets with parchment paper.
  2. In a medium sized bowl, combine the first 5 ingredients, and whisk to blend.
  3. in a large bowl, beat together the butter, granulated sugar and the brown sugar on medium speed until fluffy about 4 minutes.
  4. Beat in the eggs one at a time beating until incorporated.
  5. Beat in the vanilla.
  6. Reduce the speed to low then blend in the flour mixture and beat just until combined.
  7. Stir in the chocolate chips.
  8. Using a small scoop or a spoon, drop a heaping teaspoon of dough onto the prepared baking sheets about 2 inches apart.
  9. Bake until golden brown, approximately 9 - 11 minutes.
  10. Let the cookies cool 3 minutes on the baking sheets, then transfer to baking racks to cool.
