Crispy-Topped Spinach Casserole

• 2 (10 ounce) pkges. frozen chopped spinach, thawed and well drained
• 1 (8 ounce) container chive & onion cream cheese
• 12 cup ranch dressing
• 2 eggs, beaten
• 1 12 cups shredded cheddar cheese
• 24 Ritz crackers, crushed (about 1 cup)

1. Mix first 4 ingredients in large bowl.
2. Stir in 3/4 cup Cheddar cheese and 1/2 cup cracker crumbs.
3. Spoon into greased 2 quart casserole; top with remaining crumbs and Cheddar.
4. Bake at 375 degrees for 20-25 minutes or until casserole is heated through and cheese is melted.
