Moco Loco

  1. Dice onion to a size you like.
  2. I like my pieces a little bigger, but you can make it smaller.
  3. Mix all meat ingredients, just use your hands for the best results.
  4. Form 4 patties.
  5. Hint, to stop hamburger patties from cooking more on the edges and puffing up in the middle, put a hole in the middle of each Pattie, just index finger size, using your index finger.
  6. Cook patties like you would burgers, in the skillet.
  7. The hole fills in, and the burger cooks evenly.
  8. Chop the mushrooms while the burgers are cooking
  9. Place rice on plate, placed cooked burger on top of rice.

  11. Add eggs, cook to sunny side up.
  12. Hint - about 1 minute after eggs are added to skillet, add about 1 tablespoon water to skillet, cover immediately.
  13. Cook 1 minute until white is cooked.
  14. Carefully place 1 egg on each Pattie
  15. Add butter to same skillet, add mushrooms, cook until mostly cooked, about 5 minutes
  16. Mix the rest of the gravy ingredients in a container large enough to hold all, about 2 cup container or larger.
  17. One the mushrooms are cooked, add the gravy mixture.
  18. Bring to a hard boil.
  19. Mix the slurry together, add to the gravy, make sure it boils, cook until thickens slightly.
