Caribbean Coleslaw With Orange-Mango Dressing

  1. Prepare Orange-Mango Dressing.
  2. Place mango in food processor; process until smooth.
  3. Add remaining ingredients for the dressing and process until smooth.
  4. Set aside.
  5. Combine cabbage, mangoes, bell peppers, green onions and cilantro in a large bowl.
  6. Stir gently to mix evenly.
  7. Pour in Orange-Mango Dressing.
  8. Toss gently to coat.
  9. Serve, or store in refrigerator up to 1 day.
