BOCA-Stuffed Baked Poblanos
- 1 Tbsp. olive oil
- 1 cup chopped onion Safeway 1 lb For $1.49 thru 02/09
- 2 cloves garlic, minced
- 3 pouches (1 cup each) BOCA Veggie Ground Crumbles
- 2 cups chopped seeded tomatoes King Sooper's 1 lb For $0.99 thru 02/09
- 2 cans (11-oz. each) low sodium corn, drained
- 1 bay leaf
- 1/2 tsp. ground cumin
- 1/2 tsp. black pepper
- 1 cup KRAFT 2% Milk Shredded Mild Cheddar Cheese, divided
- 8 poblano chiles, roasted, peeled and seeded
- 1/2 cup finely chopped cilantro
- Heat oil in medium saucepan on medium heat.
- Add onion and garlic; cook 2 minutes, stirring frequently.
- Add crumbles, tomatoes, corn, bay leaf, cumin and black pepper; mix well.
- Cook 10 minutes, stirring occasionally.
- Remove bay leaf; discard.
- Stir in 3/4 cup of the cheese.
- Remove from heat.
- Fill each chile with 3/4 cup of the crumbles mixture.
- Place, filled sides up, in single layer in greased shallow baking dish; sprinkle with remaining 1/4 cup cheese.
- Bake at 350F for 15 minutes or until cheese is melted.
- Sprinkle with cilantro.
