BOCA-Stuffed Baked Poblanos

  1. Heat oil in medium saucepan on medium heat.
  2. Add onion and garlic; cook 2 minutes, stirring frequently.
  3. Add crumbles, tomatoes, corn, bay leaf, cumin and black pepper; mix well.
  4. Cook 10 minutes, stirring occasionally.
  5. Remove bay leaf; discard.
  6. Stir in 3/4 cup of the cheese.
  7. Remove from heat.
  8. Fill each chile with 3/4 cup of the crumbles mixture.
  9. Place, filled sides up, in single layer in greased shallow baking dish; sprinkle with remaining 1/4 cup cheese.
  10. Bake at 350F for 15 minutes or until cheese is melted.
  11. Sprinkle with cilantro.
