Roasted Yellow Squash Tossed with Chiles and Garlic
- 1 tablespoon extra-virgin olive oil
- 2 medium yellow squash, sliced crosswise 1/4-inch thick
- 2 cloves garlic, thinly sliced
- 1 teaspoon crushed red pepper
- Kosher salt
- Black pepper
- Preheat oven to 450 degrees .
- In a large bowl, toss the squash, olive oil, garlic, red pepper flakes, salt and pepper.
- Arrange in a single layer on a baking sheet and roast until browned and tender, about 15 minutes.
- Remove from the oven and serve.
