Cherry Vanilla Ice Cream Pie with Chocolate Cookie Crust
- 3 cups vanilla ice cream low-fat, softened, or vanilla frozen yogurt
- 1 cup cherries freshly pitted, or frozen
- 1 each chocolate crumb pie crust 9 inch
- 1 x cherries chopped, for garnish, optional
- 1 x chocolate chips (semi-sweet) for garnish, prefer mini ones, optional
- Gently combine 3 cups of softened low-fat vanilla ice cream or frozen yogurt and cherries in a big bowl.
- Transfer to a 9-inch chocolate cookie pie crust.
- Garnish with chopped cherries and mini chocolate chips if desired.
- Freeze until firm, at least 2 hours or until it forms into your favorite texture.
