Apricot Bread
- 1 can apricot nectar
- 1 1/2 c. chopped dates
- 1/3 c. dried apricots, chopped
- 1 Tbsp. grated orange rind
- 2 3/4 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1 Tbsp. shortening
- 1 c. sugar
- 1 egg, slightly beaten
- 1/3 c. cream
- 1/2 c. chopped nutmeats
- Mix nectar, dates and apricots in saucepan; simmer for 5 minutes.
- Add orange rind.
- Set aside.
- Sift flour, baking soda and salt together; blend in shortening and sugar.
- Add this to the hot mixture.
- Add egg, cream and nutmeats.
- Mix well.
- Pour into 2 bread pans that are well greased, until 2/3rds full.
- Bake at 350u0b0 for 50 to 60 minutes.
- Slide out of tins immediately after baking and cool.
