Baked Beans A La Grecque Recipe

  1. Drain beans, and put them in a pot with fresh water to cover.
  2. Bring to a boil, reduce to a simmer, cover partially, and cook till beans are done, about 1 1/2 - 2 hours.
  3. They should be tender but not mushy.
  4. Heat oil in a skillet, and saute/fry onion and garlic 2 minutes over med heat, till softened.
  5. Transfer to a stoneware or possibly clay casserole, and fold in the bean, tomatoes, bay leaves, sugar, oregano, salt, pepper and lemon juice.
  6. Cover and bake in a preheated oven for 1 hr.
  7. Taste, adjust seasonings and throw away bay leaves.
  8. Stir in mint and parsley.
  9. Serve hot or possibly at room temp.
  10. You can finish this dish up to 1 day in advance and chill.
  11. Allow to stand 1 hr at room temp before serving.
  12. Serves 8
