Baked Beans A La Grecque Recipe
- 1 lb Dry White Beans Soaked Overnight
- 3 Tbsp. Extra Virgin Extra virgin olive oil
- 1 lrg Onion Finely Minced
- 2 x Cloves Garlic Finely Minced
- 2 lb Tomatoes Peeled and Minced
- 2 x Bay Leaves
- 2 Tbsp. Sugar
- 2 tsp Dry Oregano
- 2 tsp Coarse Sea Salt
- 1 tsp Freshly Grnd Black Pepper Juice Of 1 Lemon
- 3 Tbsp. Minced Fresh Mint
- 3 Tbsp. Minced Parsley
- Drain beans, and put them in a pot with fresh water to cover.
- Bring to a boil, reduce to a simmer, cover partially, and cook till beans are done, about 1 1/2 - 2 hours.
- They should be tender but not mushy.
- Heat oil in a skillet, and saute/fry onion and garlic 2 minutes over med heat, till softened.
- Transfer to a stoneware or possibly clay casserole, and fold in the bean, tomatoes, bay leaves, sugar, oregano, salt, pepper and lemon juice.
- Cover and bake in a preheated oven for 1 hr.
- Taste, adjust seasonings and throw away bay leaves.
- Stir in mint and parsley.
- Serve hot or possibly at room temp.
- You can finish this dish up to 1 day in advance and chill.
- Allow to stand 1 hr at room temp before serving.
