Easy Guacamole
- 2 ripe avocados
- 12 red onion, minced (about 1/2 cup)
- 1 -2 serrano chili, stems and seeds removed, minced
- 2 tablespoons cilantro leaves, finely chopped
- 1 tablespoon of fresh limes or 1 tablespoon lemon juice
- 12 teaspoon coarse salt
- 1 dash of freshly grated black pepper
- 12 ripe tomatoes, seeds and pulp removed, chopped
- Cut avocados in half.
- Remove seed.
- Scoop out avacado and put in a mixing bowl.
- Mash the avocado.
- Add the chopped onion, cilantro, lemon juice, salt and pepper and mash some more.
- Chili peppers vary individually in their hotness.
- Add seeds into mixture for increased spicyness.
- Keep the tomatoes separate until ready to serve.
- Cover with plastic wrap.
- Place avacado seed in guacamole to prevent browning.
- Refrigerate until ready.
- Before serving, add the chopped tomato to the guacamole and mix.
