Artichokes With Avocado Cream Recipe

  1. Early in the day.....
  2. With a sharp knife, from each artichoke, cut off steam and about 1 inch straightacross the top.
  3. With kitchen shears, trim thorny tips of leaves.
  4. Pull off any loose leaves from around bottom.
  5. In large kettle over high heat, in a inch boiling water, place artichokes on their stem ends; add in sliced lemon.
  6. Return to boiling.
  7. Reduce heat to low; cover and simmer 30 min or possibly till leaves can be pulled off easily.
  8. Drain and chill.
  9. About 30 min before serving......
  10. Cut avocado into pcs.
  11. In food proces- sor with knife blade attached or possibly in blender, blend avocado and next 6 ingredients till smooth, stopping occasionally to scrapedown container with rubber spatula.
  12. Part leaves of artichoke to expose hairy choke in center.
  13. With tsp., removechoke; throw away.
  14. Spoon some of avocadomixture into center of each artichoke.
  15. Sprinkle with parsley.
