Fried Fish in Batter
- 1 lb fillets fish
- 2 tablespoons oil
- 1 tablespoon white wine
- 1 tablespoon lemon juice
- 1 small onion, sliced thin
- salt and pepper
- 1 cup flour
- 1 cup milk
- 1 beaten egg
- salt and pepper
- Cut the fish in serving pieces and lay flat in a dish.
- Mix oil, wine, lemon juice, salt and pepper.
- Pour over the fish.
- Lay slices of onion on top of fish.
- Let soak for 1 hour.
- Remove fish and drain on paper towels.
- Make a batter of flour, milk, egg, salt and pepper.
- Dip fish into batter, covering all sides.
- Fry in hot fat and drain on paper before serving.
- Serve with tartar sauce.
