Mini Corn Muffins With Prosciutto

  1. Preheat oven to 400.
  2. In a medium bowl, combine cornmeal, flour, sugar, baking powder and salt.
  3. Stir in minced prosciutto.
  4. In a small bowl, combine melted butter, cream and egg.
  5. Whisk until well blended.
  6. Make a well in the center of the dry ingredients and pour in egg mixture.
  7. Fold egg mixture into dry ingredients.
  8. Drop 2 tablespoons batter into mini muffin tins and bake until golden and cooked through, about 15 minutes.
