Red Chilli Chicken Roast

  1. First make the chilli paste by adding the ingredients ( dried chillies, water and vinegar ) in a pan and letting it come to a boil, cook for 15 mins till red color comes out.
  2. Let the mixture cool.
  3. Now pour it in a grinder to blend to a paste.
  4. Now marinate the whole chicken in lemon, garlic ginger paste and salt for min 1 hour.
  5. In a cooking pot, add the olive oil and fry the marinated chicken for 15 mins.
  6. Then using a spoon apply red chilli paste generously all over and in between the slits.
  7. Now let it cook till chicken is fully cooked and juicy.
  8. Do not over cook.
  9. Serve warm.
