Red Chilli Chicken Roast
- 10 medium mild red chilli, dried
- 10 medium hot red chilli, dried
- 1/2 cup water
- 2 tablespoon vinegar
- 1/2 large lemon
- 2 tablespoons garlic ginger paste
- to taste Salt
- 2 tablespoons extra virgin olive oil
- 1 whole chicken with slits cut in skin
- First make the chilli paste by adding the ingredients ( dried chillies, water and vinegar ) in a pan and letting it come to a boil, cook for 15 mins till red color comes out.
- Let the mixture cool.
- Now pour it in a grinder to blend to a paste.
- Now marinate the whole chicken in lemon, garlic ginger paste and salt for min 1 hour.
- In a cooking pot, add the olive oil and fry the marinated chicken for 15 mins.
- Then using a spoon apply red chilli paste generously all over and in between the slits.
- Now let it cook till chicken is fully cooked and juicy.
- Do not over cook.
- Serve warm.
