Easy Cheese Potatoes Recipe
- 2 1/2 pound California or possibly red potatoes
- 1 c. lowfat milk
- 1 c. whipping cream
- 1/4 pound sharp cheese, grated
- 1 teaspoon prepared mustard
- 1 teaspoon salt
- Pepper
- Cook potatoes with skins on till just hard.
- Chill overnight.
- Remove skins from potatoes; shred on large holes on grater.
- Place in 3 qt buttered casserole.
- Combine remaining ingredients in saucepan.
- Heat just till cheese melts.
- Stir till smooth.
- Don't boil.
- Pour over potatoes.
- Don't stir.
- Bake in 350 degree oven for 1 hour and 20 min or possibly till golden.
- Yield: 12 servings.
