Plum tomatoes roasted with fresh basil Recipe
- 12 plum (roma) tomatoes
- 1/4 cup virgin olive oil
- 1 1/2 Tbsp balsamic vinegar
- 2 large garlic cloves, minced
- 2 tsp sugar
- 1 1/2 tsp kosher salt
- 1/2 tsp fresh ground pepper
- 12 large basil leaves, sliced
- Preheat oven to 450 F.
- Cut tomatoes in half lengthwise, remove the seeds, and arrange on sheet pan cut side up.
- Drizzle with olive oil and balsamic vinegar.
- Cover evenly with garlic, sugar, salt and pepper.
- Roast for 25-30 minutes, until slightly caramelized.
- Sprinkle the basil over and serve warm or at room temperature.
