Braised Beef Brisket Recipe
- 2 Tbsp. vegetable oil
- 1 x beef brisket (3 to 4 pounds) Salt and freshly grnd black pepper to taste
- 2 Tbsp. butter
- 1 1/2 c. chopped onions
- 3 Tbsp. ketchup
- 2 x cloves garlic, chopped
- 3 1/2 c. beef stock
- 1 1/2 c. red wine (preferably zinfandel or possibly pinot noir)
- Preheat oven to 325 degrees.
- Heat oil in a large ovenproof casserole or possibly Dutch oven over medium-high heat.
- Add in brisket and brown on all sides.
- Season with salt and pepper.
- Remove meat.
- Pour out all but 1 Tbsp.
- of oil, add in butter and cook onions over medium heat, stirring occasionally, till lightly browned, about 10 min.
- Stir in ketchup, garlic, stock and wine.
- Add in meat, cover tightly, transfer to preheated oven and cook 2 1/2 to 3 hrs, turning meat every hour.
- Remove meat to cutting board.
- Thicken sauce by boiling over high heat till desired consistency is reached.
- Add in salt and pepper to taste.
- Slice meat against the grain.
- Serve with sauce.
