Greek Vegetable Stew

  1. Lightly brown onions in a hot dry skillet in 2 Tablespoons oil.
  2. Add oregano & garlic.
  3. Cook 1 minute.
  4. Add 4 cups water and tomatoes.
  5. Cook 10 minutes.
  6. Add remaining ingredients.
  7. Cook covered for 40 minutes, stirring occasionally.
  8. Serve with a lemon slice in each bowl
