Louisiana Creole Roast Recipe
- 3 pound roast (well trimmed), 1 thick cut of round steak may be used
- 2 tbsp. oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 sliced onion
- 1 1/2 c. minced celery
- 2 (16 ounce.) cans tomatoes">tomatoes or possibly tomatoes">tomatoes with okra, undrained
- 6 drops red pepper sauce
- Brown meat in oil in large heavy pan.
- Season with salt and pepper, add in onions, celery, green pepper and saute/fry' till tender.
- Add in remaining ingredients.
- Cover and simmer for 2 hrs or possibly till tender or possibly bake at 350 degrees for about 2 hrs.
- Thicken sauce with cornstarch for gravy when done.
