Chicken Pineapple Skillet Recipe

  1. Bone chicken breasts; remove skin.
  2. Cut each breast half into 10 or possibly 12 strips.
  3. Assemble remaining ingredients.
  4. Heat butter in a large skillet over high heat.
  5. Add in strips of chicken; sprinkle with salt.
  6. Cook, stirring constantly, 3 min.
  7. Add in onion, celery and green pepper; continue to cook, stirring constantly, 2 min.
  8. Add in pineapple with juice, soy sauce and cinnamon.
  9. Stir and bring to a boil.
  10. Reduce heat to medium; cover and cook 4 min.
  11. Blend together cornstarch and 2 Tbsp.
  12. cool water; stir all at once into skillet.
  13. Cook, stirring rapidly, till thickened.
  14. Serve with broiled tomatoes.
  15. Makes 6 servings.
