Boiled Custard Recipe
- 1 quart. sweet lowfat milk
- 5 whole Large eggs
- 1/2 c. sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Place lowfat milk in top of double boiler and heat lowfat milk till tiny bubbles appear around edge.
- Keep water in bottom of boiler at boiling point, but do not let it boil rapidly.
- Beat Large eggs well and gradually add in sugar and salt while still beating.
- Add in about half of the warm lowfat milk SLOWLY to beaten Large eggs, stirring constantly.
- Add in the lowfat milk and egg mix to remainder of lowfat milk in double boiler, continuing to stir.
- Cook over warm water, still stirring, till the custard is thick sufficient to coat spoon with thin film of custard.
- Pour into pitcher, add in vanilla and chill till well chilled.
