Pea Soup With Cilantro
- 2 tablespoons oil
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 1 teaspoon ground coriander
- 1 vegetable stock cube
- 2 12 cups boiling water
- 12 ounces frozen peas
- 12 cup cream
- 2 tablespoons cilantro, finely chopped
- salt & freshly ground black pepper
- Heat the oil, cook onion and garlic until soft.
- Add the ground coriander and cook for 1 minute.
- Dissolve the stock cube in the boiling water and add to the pan with the peas, cook gently for 15 minutes.
- Liquidise until a smooth puree.
- Season.
- Stir in cream and fresh cilantro just before serving.
