Ultimate jerk chicken
- 6 tbsp soy sauce
- 4 tsp fresh ginger
- 7 garlic cloves
- 2 scotch bonnets
- 10 green onions
- 2 tsp ground nutmeg
- 2 tsp ground cloves
- 4 tsp ground cinnamon
- 4 tsp turbinado sugar
- 8 each allspice berries/ or 4 teaspoons allspice powder
- 5 each fresh thyme
- 2 each fresh oregano
- 1/2 cup fresh lime juice
- 1/2 cup malt vinegar
- 8 lb chicken drumsticks and thighs
- Combine all ingredients in a food processor or blender, blend until all the ingredients are well mixed.
- Place marinade in a container ( I prefer a freezer bag).
- Add the chicken pieces and refrigerate a MINIMUM of 12 hours I personally go for 48 hours.
- To cook preheat oven to 350
- Take out your marinated chicken place on a foil lined sheet pan, cook for about 45 to 55 min rotating the chicken at least 4 times during the cooking process.
- Once the chicken has reached a minimum internal temp of 175 remove from oven and allow to cool 5 to 7 min.
