Fancy Peanut Soup(Serves 12)
- 1 1/2 c. peanut butter
- 1/2 tsp. vegetable seasoning
- 1 qt. chicken stock
- 3 Tbsp. butter
- 1/2 c. peanuts, chopped
- 1 qt. milk
- 1 onion, chopped
- 2 celery ribs, chopped
- 3 Tbsp. flour
- 1/2 tsp. salt
- freshly ground pepper
- In a pan over low heat, soften the peanut butter to allow for easy mixing with the milk.
- Add the milk, salt, pepper and vegetable seasoning mixture.
- Bring to a boil and then set aside. Saute the onion and celery in butter; do not allow to brown.
- Stir in the flour as if making a gravy.
- Add the chicken stock and stir constantly until the mixture comes to a boil.
- It save a lot of time and elbow grease if the stock has already been brought to a boil.
- Remove from the heat.
- Combine with the peanut butter and milk mixture.
- Return to the stove and over a very low heat, cook until all the ingredients are well blended.
