Beef And Squash Casserole

  1. Cook squash and onion in salted water, about 5 minutes.
  2. Drain well.
  3. Cook green pepper and meat until meat is no longer pink. Stir in rice.
  4. Blend eggs, soup, sour cream and seasonings; stirring into meat mixture.
  5. Fold in squash mixture.
  6. Turn into a greased 11 1/2 X 7 1/2 X 1 1/2 baking dish.
  7. Top with cheese. Sprinkle with paprika, if desired.
  8. Bake at 350u0b0 for 20 minutes or until hot and bubbly.
  9. Makes 8 servings.
