Grilled Spice-Rubbed Pork with Pineapple Salsa
- 1-1/2 qt. fresh pineapple, diced
- 3/4 cup red onions, finely chopped
- 3/4 cup fresh cilantro, finely chopped
- 3/4 cup Kraft Calorie-Wise Zesty Italian Dressing
- 6 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- 6 each pork tenderloins (1 lb./450 g each), trimmed Safeway 1 lb For $3.99 thru 02/09
- 6 Tbsp. Miracle Whip Calorie-Wise Spread
- 1/4 cup chili powder
- 1-1/2 Tbsp. ground cumin
- 1-1/2 tsp. garlic powder
- 1 gal. hot cooked long-grain brown rice
- Combine pineapple, onions, cilantro, Italian dressing and lemon juice.
- Brush meat with Miracle Whip.
- Mix seasonings; rub evenly onto meat.
- Refrigerate 30 min.
- Place meat on greased grill; cook 20 min.
- or until done (160 degrees F), turning occasionally.
- Remove from grill; cover with foil.
- Let stand 10 min.
- Slice meat.
- For each serving: Place 3 oz.
- (85 g) meat on serving plate.
- Serve with 1/4 cup (50 mL) salsa and 2/3 cup (150 mL) rice.
