Chicken Pepper Skillet
- 2 tablespoons olive oil
- 5 boneless skinless chicken breast halves, cut in inch strips
- 1 large onion
- 3 garlic cloves, pressed
- salt and pepper
- 2 cups frozen tricoloered bell peppers
- 12 ounces fettuccine pasta
- 2 teaspoons basil
- 3 tablespoons romano cheese, grated
- In a skillet, heat oil over medium-high heat and add chicken, onions, and garlic.
- Salt & pepper chicken to taste and cook until chicken is browned.
- Add frozen bell peppers, turn heat to low, and let simmer until chicken is finished cooking.
- Meanwhile, cook the pasta according to pakg directions.
- Drain and toss into the chicken mixture.
- Add basil and toss again.
- Serve with a sprinkling of romano cheese on top.
