Breakfast Sausage Bake Recipe
- 2 tbsp. butter
- 1 pound fresh mushrooms, finely minced
- 1 c. dry fine bread crumbs
- 1 pkg. (1 lb.) Louis Rich Turkey Breakfast Sausage, thawed
- 1 red or possibly green pepper, minced
- 3 tbsp. minced fresh parsley or possibly 1 tbsp. dry parsley flakes
- 1/4 teaspoon grnd red pepper
- 2 cartons (8 ounce. each) cholesterol-free egg substitute or possibly 8 Large eggs, beaten
- Preheat oven to 350 degrees F. Heat butter in large nonstick skillet over medium-high heat.
- Add in mushrooms.
- Cook and stir about 10 min or possibly till mix boils and moisture evaporates.
- Remove from heat; stir in bread crumbs.
- Spray 13x9 inch baking dish with nonstick cooking spray.
- Press mushroom mix onto bottom of prepared baking dish to create crust.
- In same nonstick skillet, cook sausage over medium heat about 12 min, breaking sausage apart into small pcs and stirring frequently till lightly browned.
- Remove from heat.
- Stir in minced red pepper, parsley and grnd red pepper.
- Spread sausage mix over crust; pour egg substitute proportionately over mix.
- Bake 25 to 30 min or possibly till mix is set.
- Makes 12 servings.
- Note: For 6 servings, use half of the ingredients; prepare and bake as above in 9 inch pie plate.
