Blondie's Grandma's Baked Oatmeal
- 2 tbsp brown sugar
- 1 egg
- 2 tsp cinnamon (I used Ceylon the last few times from Penzeys, but any kind will do)
- 3 cup oatmeal (quick oats or regular)
- 1 1/2 cup 2% milk
- 1 tsp vanilla extract (I use extra)
- 1/2 cup plain yogurt
- 2 cup mixed berries, fresh or frozen (I use blackberries, blueberries, & raspberries mostly just like Grandma did, but sometimes I add strawberries too. You can make your favorite mix.)
- Preheat oven to 350.
- Grease an 8 X 8 glass baking dish.
- In a medium bowl, combine the egg, yogurt, milk, vanilla, brown sugar, oatmeal, and cinnamon.
- Add 3/4 of the mix to the baking dish.
- Layer the berries evenly on top of the oatmeal mixture.
- Layer the remaining oatmeal mixture on top of the berries.
- Bake until the top starts to brown and the oatmeal gets bubbly, about 30 minutes.
- Cut into sections and serve in bowls.
- Grandma served this with a bit of milk and maple syrup over the top, but you can use either or, or leave it plain too.
