Baked Goat's Cheese Log With Prawns And Basil Recipe
- 2 sht Jus-rol Fillo Pastry, thawed
- 1 x Clove of garlic, crushed
- 10 x Fresh basil leaves, finely minced
- 1 ounce Pine nuts
- 1 Tbsp. Grapeseed oil
- 2 ounce Grated Parmesan
- 1 ounce Prawns, minced
- 2 x in pcs of goat's cheese
- 1 ounce Butter
- Mix the garlic and basil with a healthy pinch of salt.
- Lb.
- the nuts in a pestle and mortar; add in the oil, basil and garlic mix.
- Stir in the Parmesan and prawns.
- Cut each sheet of fillo in half and place a cube of goat's cheese in the centre.
- Spoon over the basil mix.
- Brush edges of pastry with melted butter and wrap up to create a parcel.
- Place on a baking sheet, brush with butter and bake at 200C (400F) mark 6 for about 20min.
- Serve hot with salad leaves.
