Italian Sausage Casserole
- 1 lb cubed Italian sausage
- 2 onions
- 2 -3 cups mashed potatoes
- 12 cup Italian seasoned breadcrumbs
- 1 egg
- salt
- pepper
- extra virgin olive oil
- heat the EVOO in a large skillet.
- brown the sausage, remove and set on paper towel to drain off extra grease.
- using the same oil, sautee' the onions.
- Mix the mashed potatoes, bread crumbs, egg, and salt and pepper in a bowl.
- add the browned sausage and onions.
- mix all ingredients together.
- at this point, you can either make patties and brown them, or put in a cassorle dish and back till golden on top.
- add shredded cheddar after cooking is done.
- serve nice and hot so cheese can melt.
