Banana Cake with Cream Cheese Frosting
- 2-1/4 cups (525 ml) flour
- 3/4 tsp (4 ml) baking soda
- 1/2 tsp (2 ml) baking powder
- 1/2 tsp (2 ml) salt
- 2 large mashed ripe bananas
- 1/4 cup (60 ml) buttermilk
- 1 tsp (5 ml) vanilla extract
- 1-1/2 sticks unsalted butter, room temperature
- 1-1/3 cups (325 ml) sugar
- 2 large eggs
- 1 8 oz (224 grm). package cream cheese, room temperature
- 1 cup (225 ml) powdered sugar
- 1 stick butter, room temperature
- 1 tsp (5 ml) vanilla extract
- Preheat oven to 350 degrees (175 C.).
- Butter 2 loaf pans or one 9X11X2 inch pan.
- Mix flour, baking soda, baking powder salt in a bowl.
- Mix mashed bananas, buttermilk and 1 tsp (5 ml) vanilla in another bowl.
- Add butter, sugar and vanilla to banana mixture, beat until blended, then mix in the dry ingredients.
- Bake cakes 25 to 35 minutes until toothpick comes out mostly clean.
- Beat cream cheese and butter in large bowl until fluffy.
- Add vanilla.
- Gradually mix in powdered sugar.
- Frost tops of cakes or unmold loaves and frost after cool.
