Cream Pie (Coconut or Banana)
- 1 (8 inch) pie crusts, cooked
- 12 cup sugar
- 1 pinch salt
- 3 tablespoons cornstarch
- 2 cups milk
- 14 cup corn syrup
- 3 egg yolks, beaten
- 2 tablespoons butter
- 1 teaspoon vanilla
- 12 cup coconut or 34 cup banana, sliced
- 3 egg whites
- 12 cup sugar
- Preheat oven to 350 degrees.
- Mix together sugar, salt and cornstarch.
- Add milk and corn syrup, cooking on medium heat until thick.
- Temper the egg yolks by stirring in a little of the milk mixture at a time into the beaten egg yolks.
- Add egg yolk mixture back to milk mixture and cook 3 minutes, stirring constantly.
- Remove from heat and add butter and vanilla, coconut or banana.
- MERINGUE.
- Beat egg whites until stiff.
- Add sugar slowly, continuing to beat.
- When stiff, put on pie and bake pie for 12 - 15 minutes.
