Nif's Seared Scallops

  1. In a large nonstick frying pan, add olive oil and turn on low heat; let oil warm.
  2. Add basil and let oil absorb flavour for 5 minutes.
  3. Turn heat to medium.
  4. Sprinkle scallops with salt and pepper and add to hot oil.
  5. Add butter and cook on each side for 2 minutes.
  6. Remove from heat and add to serving dish.
  7. Sprinkle with fresh lemon.
  8. Place chives over top and serve.
