Herbed Couscous
- 2 cups couscous
- 2 cups water
- 1 tablespoon butter
- Salt and pepper
- 1/2 bunch scallion, finely sliced
- 1/4 cup fine diced Spanish onion
- 1 to 2 tablespoons rice wine vinegar
- Bring water, 1 tablespoon salt, and butter to a boil.
- Add couscous, remove from heat and stir quickly and thoroughly.
- Cover for 5 minutes.
- Moisture will be absorbed.
- Fluff with a fork.
- Add scallions, Spanish onion and rice wine vinegar
