Blue Corn Casserole(Santa Fe)
- 1 teaspoon vegetable oil
- 3 1/2 cups cornmeal blue
- 1 medium onions chopped
- 1 teaspoon baking powder
- 2 cups pinto beans cooked, drained
- 2 teaspoons cumin
- 1 cup tomato sauce
- 2 teaspoons chili powder
- 2 1/2 cups cheese grated or tofu
- 2 cups water
- 1/2 cup scallions, spring or green onions
- 1 each eggs or egg sub., beaten
- 1 x picante sauce
- 1 cup green chili peppers chopped
- Mix first three ingredients.
- Combine water, egg and chilies in separate bow
