Greek Style Tuna Melt on Potato Pancakes
- 12 ounces solid white tuna, in oil-drained
- 1 cup mayonnaise
- 1 lemon, juice of
- 1 cup green onion, chopped
- 2 cups fresh spinach leaves, chopped
- 1 cup sun-dried tomato, chopped
- fresh ground pepper
- 1 (20 ounce) package Simply Potatoes Shredded Hash Browns
- 2 eggs
- 2 tablespoons olive oil
- 12 cup flour
- 12 cup olive oil
- 2 cups goat meat, cheese-crumbled
- In medium bowl, mix all tuna ingredients well.
- Refrigerate until ready.
- In large bowl, mix hash brown, eggs, olive oil, flour until uniform.
- Heat oven to 350.
- Heat oil on flat grill or large frying pan.
- Drop hash brown mix with Tablespoon or teaspoon, depending on need, flatten with spatula, grill 5-6 minutes per side.
- Keep pancakes warm inches oven.
- When finished, line large baking pan with potato pancakes, top with tuna mix, sprinkle with goat cheese.
- Bake in oven 10 minutes, last 2 under broiler.
- Serve hot.
