Cinnamon Rolls

  1. For dough:.
  2. Combine milk and butter in glass measuring cup.
  3. Microwave on high until butter melts.
  4. Pour into bowl of stand mixer fitted with paddle attachment.
  5. Add 1 cup flour, sugar, egg, yeast, and salt.
  6. Beat on low speed, stopping occasionally to scrape down sides of bowl.
  7. Add 21/2 cups flour.
  8. Beat on low until flour is absorbed and dough is sticky, scraping down sides of bowl.
  9. Turn dough out onto lightly floured work surface.
  10. Knead until smooth and elastic, adding more flour if sticky, about 8 minutes.
  11. You can also need dough in your KitchenAid mixer.
  12. Let dough rise in warm draft-free area until doubled in volume, about 2 hours.
  13. For filling:.
  14. Mix brown sugar and cinnamon in bowl.
  15. Punch down dough.
  16. Transfer to floured work surface.
  17. Roll out to 15x11-inch rectangle.
  18. Spread butter over dough, leaving 1/2-inch border.
  19. Sprinkle cinnamon sugar evenly over butter.
  20. Roll dough into log.
  21. Spray a glass baking dish with nonstick spray.
  22. Arrange rolls cut side up (there will be almost no space between rolls).
  23. Bake at 375F for 20-30 minutes.
  24. For glaze:.
  25. Combine powdered sugar, butter, and vanilla in medium bowl.
  26. Using electric mixer, beat until smooth adding water to thin out.
  27. Spread glaze on rolls.
  28. Serve warm or at room temperature.
