Rootbeer Pulled Pork

  1. Rub the roast all over with the salt and pepper.
  2. Heat olive oil in a large pan and sear all sides.
  3. Place roast in a slow cooker with onion wedges, garlic and 1 cup root beer.
  4. Set on low and cook for 8 hours (5 hours if you set it on high).
  5. Remove pork to a plate and shred pork with two forks.
  6. Prepare the sauce.
  7. In a medium sauce pan, place the remaining 4 cups root beer, chili sauce, hot sauce, garlic and jalapeno pepper if using.
  8. Bring to a boil then reduce heat to a simmer.
  9. Simmer on low for about 45 minutes stirring often until sauce thickens.
  10. Toss the sauce into the shredded pork.
  11. Serve on a toasted bun.
  12. Enjoy.
