Low Carb Skillet Mushrooms and Bacon - 5 Net Carbs

  1. Cook bacon in large skillet over med heat for 4 min per side until crisp.
  2. Remove bacon to paper towels and drain most of the fat, leaving just enough to coat the bottom of the skillet.
  3. Add scallions and cook for 1 minute.
  4. Add mushrooms and almonds to the skillet and cook, stirring, for 5 min or until mushrooms soften.
  5. Distribute mushrooms to serving plates and crumble bacon over each serving.
  6. Season with salt and pepper.
