Low Carb Skillet Mushrooms and Bacon - 5 Net Carbs
- 12 lb thickly sliced bacon
- 3 scallions, roots and green parts removed, sliced into 1/8-inch slices
- 1 (8 ounce) packagesliced white mushrooms
- 14 cup sliced almonds
- salt and pepper
- Cook bacon in large skillet over med heat for 4 min per side until crisp.
- Remove bacon to paper towels and drain most of the fat, leaving just enough to coat the bottom of the skillet.
- Add scallions and cook for 1 minute.
- Add mushrooms and almonds to the skillet and cook, stirring, for 5 min or until mushrooms soften.
- Distribute mushrooms to serving plates and crumble bacon over each serving.
- Season with salt and pepper.
