Flank Steak Pinwheels

  1. Place bacon on a microwave-safe plate lined with paper towels.
  2. Cover with another paper towel and microwave on high for 2-3 minutes or until partially cooked.
  3. Meanwhile, cut steak horizontally from a long side to within 1/2 inch of opposite side.
  4. Open meat so it lays flat; cover with plastic wrap.
  5. Flatten to 1/4 inch thickness.
  6. Remove plastic.
  7. Place spinach over steak to within 1 inch of edges; top with red peppers.
  8. With the grain of the meat going from left to right, roll up jelly-roll style.
  9. Wrap bacon strips around beef; secure with toothpicks.
  10. Slice beef across the grain into eight slices.
  11. Grill, covered, over medium heat for 5-7 minutes, or until meat reaches desired doneness.
  12. Discard toothpicks.
