Parmesan Flounder
- 1 lb flounder fillets (4 pieces)
- 14 cup freshly grated parmesan cheese
- 3 tablespoons low mayonnaise
- 12 teaspoon paprika
- Heat broiler.
- Cover broiler pan with foil, then cooking spray.
- Place fillets on broiler pan, folding thin ends for more even cooking.
- In a small bowl, mix Parmesan and mayonnaise, spread over fillets, sprinkle with paprika.
- Broil 6 minutes or until fish is opaque throughout.
