Ginger-Orange Beef
- 1 lb flank steak
- 1 tablespoon oil
- 2 tablespoons fresh ginger, grated
- 1 cup carrot, diagonally sliced
- 1 cup red pepper, chopped
- 1 cup green pepper, chopped
- 10 ounces water chestnuts, sliced
- 4 ounces snow peas, trimmed
- 1 tablespoon orange rind, grated
- 1 teaspoon cinnamon
- 13 cup low sodium soy sauce
- 1 tablespoon cornstarch
- Slice steak into 1/4" thick slices .
- Heat oil in a large skillet over medium high heat.
- Add ginger and stir fry for one minute.
- Add steak and stir fry for 3 minutes, or until steak is cooked through.
- Remove steak and keep warm.
- Add carrots, peppers, water chesnuts, snow peas, orange rind and cinnamon.
- Stir fry for three minutes, then add steak back inches.
- In a small bowl, mix soy sauce and cornstarch.
- Stir ino steak and vegetable mixture until thickened, stirring constantly.
- Serve immediately.
