A Zingy Colourful Coleslaw Recipe
- 1/2 sm White cabbage, shredded Few leaves red radicchio lettuce
- 1 sm Red onion
- 1 sm White onion
- 1 x Yellow pepper, roasted
- 1 x Orange pepper, roasted
- 2 dsp honey
- 2 dsp lime juice
- 1/4 tsp Mustard Salt and pepper
- To prepare the vegetables for the coleslaw, slice the cabbage very finely along with the red and white onions.
- Tear the red lettuce into small pcs and mix with the other ingredients.
- Prepare the peppers by cutting into strips, removing the seeds and grilling for 2 min on either side.
- This improves and sweetens the flavour of the peppers.
- Prepare the dressing, by mixing together the honey, lime juice, salt, pepper and mustard till smooth and well blended.
- Pour over the salad ingredients, toss well, then serve.
